This is a great recipe for your children (or husbands) because they contain a secret healthy ingredient…..Black Beans! Beans are very high in protein and fibre and are a great addition to your diet. The beans make the brownies nice and moist and trust me, no one will know unless you tell them. The best part is that this recipe is grain free, gluten free, dairy free and nut free! Perfect for school (or work) lunches.
Black Bean Brownies
Ingredients:
1 can (15 ounce) black beans, drained and rinsed (I like Eden Organics line of canned beans because their cans are BPA free!)
3 large eggs
1/3 cup melted coconut oil, plus some for the pan
¼ cup cocoa powder
2 tsp vanilla extract (you could also use mint for Mint Chocolate Brownies)
½ cup natural sweetener (sucanat, coconut sugar, etc)
½ cup chocolate chips (I use Enjoy Life because they are allergen free)
Instructions:
1. Preheat oven to 350F
2. “Butter” an 8-inch baking pan with coconut oil
3. Place the black beans, eggs, coconut oil, cocoa powder, vanilla extract and sugar in a food processor and process until smooth
4. Remove the blade and gently stir in the chocolate chips
5. Transfer the mixture to the prepared pan
6. Bake the brownies for 30-35 minutes, or until set in the centre
7. Cool before cutting into squares
8. Enjoy!

Quick question re: the brownie recipe- my son is allergic to eggs, would applesauce be ok to substitute?
Wow, I’m definitely going to have to try this!
These brownies are great. The initial taste is good but the finish is excellent. Makes you want to eat more which is great since they’re healthy.
