These Banana Oat Protein Pancakes are the perfect way to start your day with a nutritious and satisfying meal. Packed with protein, fibre, and natural sweetness, they’re easy to make and perfect for meal prep!

Ingredients:

  • 1 ripe banana
  • 1/2 cup rolled oats
  • 1/4 cup protein powder (vanilla or unflavoured)
  • 2 eggs
  • 1/4 cup unsweetened almond milk (or milk of choice)
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Optional: 1 tbsp flaxseeds or chia seeds for added fibre
  • Optional: 1 tbsp honey or maple syrup for extra sweetness

Instructions:

  1. In a blender or food processor, blend the banana, oats, protein powder, eggs, almond milk, baking powder, cinnamon, vanilla, and salt until smooth.
  2. Let the batter sit for 2-3 minutes to thicken slightly.
  3. Heat a non-stick skillet over medium heat and lightly grease with coconut oil or butter.
  4. Pour small amounts of batter onto the skillet to form pancakes.
  5. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
  6. Repeat with the remaining batter.
  7. Serve warm with fresh berries, nut butter, or a drizzle of maple syrup.
