High Protein Apple Cinnamon Muffins

• 3 large local apples chopped (about 2 cups)
• 3 TBS warm water
• 2 TBS cinnamon, divided
• 9 eggs (free range)
• 1 ½ TBS coconut oil
• 3 TBS coconut milk
• 1 ½ TBS coconut flour
• ¼ tsp baking soda
• pinch of sea salt

1. Preheat oven to 350F
2. In a medium skillet, sauté the apples, water and 1 TBS cinnamon until the apples are the consistency of chunky applesauce. Allow mixture to cool
3. In a mixing bowl, whisk the eggs, coconut milk, coconut flour, ½ tsp cinnamon, baking soda and salt until well combined
4. Add the cool apples, saving ¼ cup for a garnish
5. Spoon ¼ cup mixture into lined muffin tins, add 1 tsp of remaining apple mixture on top of each muffin
6. Bake for 40 minutes, let cool and enjoy!
