As a mom, our Nutritionist Jen Wright is always looking for ideas for her children’s lunch that resemble “everyone else’s lunch”. She says “My kids were always asking for pudding cups! So I can up with a way to make everyone happy. These are great for lunches, a quick snack before an activity or a yummy dessert.”

Protein Packed Chocolate Pudding
Pudding Cups

Ingredients:
-1/3 cup Genuine Health Fermented Vegan Protein powder
-1/3 cup coconut sugar or maple syrup
-2 cups of coconut milk or almond milk. (I used coconut milk to make it nut free for school)
-2 eggs
-1 tbsp cocao powder
-1 tsp vanilla

Optional: My oldest loves a few drops of mint oil in hers.

Directions:
Combine protein powder, sugar and milk in a pot. Mix until lumps are smooth. Cook over medium heat stirring until pudding starts to thicken. Remove from heat. Beat eggs in a cup, and add some of the hot mixture to eggs. Stir and add the egg mixture back to pudding. Cook, stirring constantly until pudding bubbles. Remove from heat and add the vanilla or mint flavouring. Pour directly into child friendly lunch containers or bowls. Let cool completely before serving. Enjoy!
