This soup is a health booster and also so easy prepare. So even if you are feeling a little under the weather it’s not too labour intensive. Coconut Thai Soup

Ingredients
2 tbsps coconut or olive oil
3 cloves garlic, minced
1/2 yellow/red or green onion, sliced
1 carrot, sliced thin
2 cups white, brown or shiitake mushrooms, sliced
2 very small red chili peppers, minced, or 1 jalapeno pepper ( If you have problems with hotness just use the cayenne later)
1 1/2 cups or organic vegetable or chicken broth plus water if needed
1 12 ounce can or organic coconut milk ( You can add another half can if you like as well or two full cans)
5-6 thin slices ginger (or galangal, if you have it)
1 and 1/2 tsps of cayenne pepper
1 tsp black pepper
juice from one lime
2 tbsp chopped fresh cilantro

Directions
In a large soup pot, sautee the onion, garlic, carrots and mushrooms and pepper in oil for just a few minutes until lightly cooked. Then reduce heat to low and add the vegetable broth, coconut milk, ginger, cayenne and lime juice and black pepper, but NOT the cilantro for now. Allow to simmer over low heat for at least 20 minutes. Stir in fresh cilantro just before serving.
