Healthier ChristmaS SPICE COOKIES

These festive cookies are bursting with holiday flavour thanks to a blend of warming spices and natural sweeteners. Perfect for a cozy family baking day or as a thoughtful (and healthy!) gift.


Ingredients:

  • 1 ½ cups almond flour
  • ½ cup oat flour
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 2 tbsp ground flaxseed + 5 tbsp water (flax eggs) or 1 regular egg
  • ⅓ cup melted coconut oil
  • ⅓ cup maple syrup or coconut sugar
  • 1 tsp vanilla extract
  • Optional: ¼ cup dark chocolate chunks, chopped nuts, or dried cranberries

Instructions:

  1. • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  3. • In a medium bowl, whisk together almond flour, oat flour, baking soda, spices (cinnamon, ginger, cloves, nutmeg), and salt.

  5. • In a separate bowl, mix flax eggs (or regular egg), melted coconut oil, maple syrup, and vanilla extract until smooth.

  7. • Gradually stir the wet ingredients into the dry mixture until a dough forms. Fold in optional add-ins like dark chocolate, nuts, or cranberries.

  9. • Scoop tablespoon-sized portions of dough onto the baking sheet, flattening slightly to form cookie shapes.

  11. • Bake for 10–12 minutes, or until the edges are golden brown. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
