Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the oat flour, almond flour, baking soda, pumpkin spice, and salt.
  3. In a separate large bowl, mix the pumpkin puree, coconut oil, maple syrup, vanilla extract, and egg until smooth and well combined.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined. If using, fold in the dark chocolate chips and chopped nuts.
  5. Scoop tablespoons of the dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
