Ingredients:

  • 1 cup quinoa (cooked)
  • 1/2 cup grilled chicken or chickpeas (for plant-based option)
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 cup cucumber (diced)
  • 2 tbsp feta cheese (optional)
  • 2 tbsp hummus
  • 1 tbsp olive oil
  • Juice of 1/2 lemon
  • 1 tbsp chopped fresh parsley
  • Salt & pepper to taste

Instructions:

  1. Cook quinoa according to package instructions and let it cool slightly.
  2. Arrange the quinoa in a bowl and top with chicken (or chickpeas), tomatoes, cucumber, and feta.
  3. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  4. Add a dollop of hummus and garnish with fresh parsley
