Mushrooms are versatile. They can be enjoyed stuffed, turned into mini pizzas and even burgers. Try these easy stuffed mushrooms for a flavourful dinner.

Ingredients:
Large Mushrooms portobello or use any other large mushroom variety
1 package of lean ground turkey or chicken
Salt and Pepper
2 tbsp butter or coconut oil melted
2 tbsp avocado oil
2 large bell peppers chopped or carrots or other veggies you love
2 green onion bunches chopped
1 clove garlic, chopped finely
1 to 2 cups Daiya Cheese or Regular organic cheese (reserve some for topping)

Ingredients

1. Clean your mushrooms and remove the stems to be chopped. You want there to be a space to put filing in so you can hollow out your mushrooms a bit more too. If there not a space for hollowing, no worries, just place the ingredients on top like a pizza for a mushroom like the Cremini types. Once the mushrooms are prepared dip them in melted butter or coconut oil for a great baked texture. Place on a pan lined in parchment paper.

2. Next cook your meat of choice and add any desired spices in a pan. Salt and pepper are usually all that are needed with a little avocado oil. Set aside in a BIG bowl large enough for add in of veggies. You’ll be using it soon.

3. Chop you peppers, and mushroom stems if you still need to, and green onions. Sauté the vegetables in the oil for 5 to 10 minutes.
In a bowl combine the sautéed veggies and with any cheese you wish to add in. Get you cooked meat and add in the veggie cheese mix. Now add the filing in the the mushrooms, some might fall out but it’s okay!

Add on any cheese you like on the top.

Bake at 400 F for 20 to 30 minutes and enjoy!
