Little Monster Cookies Recipe

Ingredients:

• 1 cup unsalted organic almond butter, peanut butter, or cashew butter (we used cashew)

• 1 egg (room temperature if possible)

• ½ cup Golden Monk Fruit Sugar (or regular sugar)

• 1 tbsp vanilla extract

• ¼ cup sifted cassava flour or regular white flour (oat flour or gluten-free all-purpose flour can also be used)

• 1 tbsp baking powder

• 1 tsp baking soda

• 1 tsp kosher salt

• ½ cup dark chocolate chips (or any other type of chocolate chips)

• 2 tbsp Halloween sprinkles (we used Wilton brand)

• Candy eyes (at least 12, Wilton or another brand)

Instructions:

• Preheat the oven to 350˚F and line a baking sheet with parchment paper.

• In a large bowl, combine the nut butter and egg, mixing well with a wooden spoon.

• Add the sugar and vanilla extract, then mix again until smooth.

• Sift in the flour, baking powder, baking soda, and salt, and stir until fully incorporated.

• Stir in half of the chocolate chips, reserving the rest to add on top of the cookies.

• Form dough balls on the prepared baking sheet. Press candy eyes and sprinkles into each cookie, creating “little monsters.” 

• Bake for 10 minutes, then check for doneness. If needed, bake for an additional 5–8 minutes until the bottoms are golden brown.
