Rachel stopped by Rogers’ Daytime Ottawa to talk about why people are doing salads all wrong! Lots of easy tips and recipes.

Maple Bacon Salad

Ingredients:
• 4 cups baby spinach
• 1 medium apple chopped
• ¼ cup pecans
• 1 yellow pepper, chopped
• ½ pound cooked bacon, chopped

Dressing:
• ¼ cup olive oil
• ¼ cup balsamic vinegar
• ¼ cup maple syrup

Instructions:
1. Place spinach in large salad bowl and top with the rest of the ingredients
2. Place all dressing ingredients in a glass container and shake well.
3. Pour dressing over salad and mix well.

Taco Salad

Ingredients:
• 1 lb ground bison, turkey, chicken, or other meat
• 1 tsp smoked paprika
• 1 tsp garlic powder
• 1 tsp cumin
• 1 tsp chipotle
• 1 tsp black pepper
• 8 cups mixed salad greens
• 1 red bell pepper, chopped
• ½ red onion, chopped
• 1 cup chopped tomatoes
• juice of ½ lemon

Instructions:
1. Brown meat in a large skillet over medium heat until cooked thoroughly
2. Mix seasonings in a bowl, then sprinkle over meat until it is evenly coated with spices. Remove from heat and allow to cool slightly
3. Plate 2 cups of lettuce per serving and top each with vegetables and meat.

Asian Shrimp Salad

Ingredients:
• 2 cups snow peas
• ½ cup sliced radishes
• ½ cup chopped cilantro
• ¼ cup chopped cashews
• 12 ounces cooked shrimp

Dressing:
• ½ TBS garlic, minced
• ½ TBS ginger minced
• 2 TBS toasted sesame oil
• 2 TBS coconut aminos
• 2 tsp sesame seeds
• ½ tsp each of salt and pepper

Instructions:
1. Mix salad ingredients in a large bowl
2. Place all dressing ingredients in a glass container and shake well.
3. Pour dressing over salad and mix well.

Easy Bean Salad

Ingredients:
• 1 can chickpeas
• 1 can kidney beans
• 1 can black beans
• 1 green pepper, chopped
• ½ cup chopped onion
• ½ cup chopped celery
• ½ cup olive oil
• ½ cup red wine vinegar
• s&p

Instructions:
1. Mix all ingredients in a large bowl
2. Enjoy immediately, or refrigerate in an air-tight container for up to 4 days.
