Banana Ice cream
Ingredients:
1 frozen banana
Instructions:
Place banana in food processor and blend until smooth.
Options:
Chocolate peanut butter- add 1 TBS cocoa powder & 1 TBS peanut butter
Berries- add ½ cup of your favourite frozen berries
Protein- add 1 scoop of your favourite protein powder
Tip:
This recipe does not freeze well for long periods of time, so instead you can keep frozen bananas in your freezer and make it any time you have an ice cream craving!
Healthy Fudgesicles
Ingredients:
2 ripe avocados
⅓ cup sweetener (honey or maple syrup work well)
½ cup cocoa powder
2 tsp vanilla extract
½ cup coconut milk (can also use almond or oat milk)
Instructions:
Add all ingredients to a food processor and blend until smooth (2-3 minutes). If needed, add additional milk to reach desired consistency.
Pour into popsicle molds and freeze for 3 hours or more.
Smoothie Pops
*Anytime you have a smoothie and have leftovers, put that in a popsicle mold and freeze for a future treat! Or try this easy recipe:
Ingredients:
1 cup plain greek yogurt or coconut milk
1 cup raspberries (or your favourite seasonal berries)
1 tsp cinnamon
1 tsp vanilla extract
1 TBS sweetener of choice (stevia, monk fruit, honey, maple syrup)
Optional: 1 scoop vanilla protein powder
Instructions:
Mix all ingredients together and pour into popsicle molds.
Freeze for 3 hours and enjoy!

At Home Coconut Ice Cream
Ingredients
2 cans (13.5 ounce) full fat coconut milk ( I used only 1 can!)
½ cup raw sugar or honey (Try 1/4 cup xylitol or monk fruit sweetener and taste)
1 vanilla bean ( I only had vanilla extract is okay!)
I also added 1 tbsp of potato vodka (other vodka is made from grains, so if you can tolerate grains go ahead!)
Instructions
Pour the coconut milk and sugar into a medium bowl.
With a sharp knife, split the vanilla bean and scrape the seeds into milk. Add the vanilla pod also.
Stir well to dissolve the sweetener.
Refrigerate the mixture for 3 hours to overnight to let the flavours develop.
Remove the vanilla pod form the mix or if using vanilla extract no need!
Whisk the mixture to evenly distribute the vanilla, and to add some air to the mixture.
Pour into a large loaf pan and place into the freezer, I covered it with a wax rubber and added a rubber band to hold it on.
After about an hour, stir the mixture.
Return it to the freezer until frozen solid.
AND EAT!
Using an ice cream scoop is the best for this.
